The Season For Fall Flavors

photo copy 4We all love yummy, seasonal-flavored baked goods. One dessert I find enjoyable to make are cupcakes. They are the perfect treat for almost any occasion and super fun to bake! I like how they can be creatively decorated and also have an assortment of toppings and delicious flavors.

If you are not an experienced baker and are looking for a fun, creative way start, I highly recommend using The Cupcake Bible (available on Amazon). There are many helpful tips and tricks to the mastery of baking and technique ideas. In this book, I gathered creative ideas  and some yummy recipes for the perfect seasonal cupcake I am sure you will love!

As I skimmed through the fall section of The Cupcake Bible, I decided to bake the applesauce spice cupcakes with butterscotch filling. I gave it a my own, fun twist and made each cupcake have there own flavorful “look” of fall.

Apple Spice Cupcakes with Butterscotch Filling

Bake time: 15-16 minutes

Ingredients

Cupcakes:
1 cup light brown sugar
1 1/2 sticks of unsalted butter
3 eggs
1 1/2 teaspoons vanilla
2 1/4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
3/4 teaspoons ground nutmeg
1/2 teaspoons ground ginger
1/4 teaspoon salt
1 1/2 cups sugar-free applesauce
1/2 cup milk
2/3 cup chopped walnuts (optional)
2/3 cup butterscotch chips (optional)

Butterscotch Filling:
1 cup unsalted butter
3/4 cup powered sugar
1 tablespoon vanilla extract
4 tablespoons milk or heavy cream

Instructions

Preheat oven to 350 degrees fahrenheit.  Line a standard muffin pan with paper baking cups.

Beat brown sugar and butter in large bowl with electric mixer at medium speed until light and fluffy. Beat in eggs and vanilla until well blended.

Whisk flour, baking soda, cinnamon, nutmeg, ginger and salt in medium size bowl.  Add one third of flour mixture to butter mixture, beat until blended. Add milk (mix until blended).  Add remaining flour mixture and applesauce, beating well after each section.  Stir in walnuts and butterscotch chips. Spoon batter evenly into prepared muffin cups.
 
Check cupcake for a golden finish by inserting toothpick in middle. Next, let pan cool for 10 minutes before removing to wire rack; cool completely.  

In the meantime, prepare the butterscotch pudding. After cupcakes have cooled, fill center with butterscotch filling.

Notes

Add various toppings like walnuts, pretzels, carmel drizzle, chocolate coffee beans, peanut butter balls, or candy corn. Remember to have fun and be creative with your desired topping!
