Red Velvet Donuts

February 04, 2016

Over the years I’ve heard the saying, “The way to a man’s heart is through his stomach” time and time again. I don’t know about you ladies, but that’s the way to my heart as well! What better way to say “I love you” than with a homemade treat?

Valentine’s Day isn’t too far off and so today I am sharing a recipe that is perfect for breakfast in bed or a treat the whole office will enjoy: decadent red velvet donuts topped with a savory creamy cheese frosting. Whip up a batch of these delightful treats and both stomachs and hearts are sure to be full this holiday!

Red Velvet Donuts

YIELD: 6 DONUTS

Ingredients

DONUTS
3/4 cup cake flour
1/4 + 2 tbsp all-purpose flour
2 tbsp unsweetened cocoa powder
1 tsp baking powder
Pinch of salt
2 tbsp butter melted
1/2 cup buttermilk
1/3 cup sugar
1 egg at room temperature
1 tsp vanilla
1/2 tsp red food coloring
1/4 tsp baking soda
1/2 tsp white vinegar

FROSTING
1 & 1/2 cups powdered sugar
3 tbsp cream cheese
3 tbsp milk
1/2 tsp vanilla
*Sprinkles if desired

Instructions

Preheat oven to 350°F.

In a large bowl, combine both flours, cocoa, baking powder, and salt.

In a separate bowl, combine the butter, buttermilk, sugar, egg, vanilla, and food coloring. Mix well until combined. Add the dry ingredients to the wet ingredients and stir just once or twice.

In a small bowl, combine the baking soda and vinegar. Allow to bubble and then add to the batter, mixing well until smooth and consistent.

Spray a donut pan with nonstick spray and divide the batter among the sections. Bake for 12-14 minutes or until a toothpick, inserted into the center, comes out clean.

Once baked, remove from the oven and allow to cool in the donut pan for 5 minutes. Remove from pan to finish cooling.

While the donuts are cooling, prepare the frosting. Whisk together all of the frosting ingredients until smooth. Dip the top of each donut into the frosting. Add sprinkles if desired.

Share with loved ones and enjoy!
