Momma’s Fall Comfort Food

One of my favorite things about fall is pulling out my comfort food recipes. The following recipes from my momma and my husband’s momma are both very easy and yummy — because we all know that mommas know how to cook!

This apple crisp recipe comes from my mom and is based off one of my grandmother’s recipes. I love it because it’s just right, plus it’s super easy!

The recipe is for the filling only. I cheat most of the time (I know it’s bad!) and use store-bought Pillsbury crust. I love the flavor of it, and it’s so easy and quick!

Apple Pie Filling

Ingredients

Apple Pie Filling

  • 3-4 apples, sliced and peeled
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 cup water
  • pinch of salt

Crumb Topping

  • 3/4 stick butter (6 tablespoons)
  • 1 cup flour
  • 1 cup sugar

Instructions

1. Place 1 pie crust in ungreased 9-inch glass pie plate. Press firmly against side and bottom.
2. Slice and peel apples and put place them inside the pie crust.
3. Combine sugar and cinnamon and sprinkle on top of sliced apples.
4. Pour water on top and sprinkle with a pinch of salt.
5. For crumb topping, mix the butter, flour, and sugar, and sprinkle it on top of apple mixture.

Bake for one hour at 350 degrees.

This soup recipe is a favorite of both my husband and mother-in-law. It does take a little prep time, but I promise IT’S WORTH IT! I added a little more potatoes than the recipe called for (because we love lots of potatoes in our soup).

Cheeseburger Soup

Ingredients

  • 1-1/2 cups water
  • 2 cups cubed peeled potatoes
  • 2 small carrots, grated
  • 1 small onion, chopped
  • 1/4 cup chopped green pepper
  • 1 jalapeno pepper, seeded and chopped
  • 1 garlic clove, minced
  • 1 tablespoon beef bouillon granules
  • 1/2 teaspoon salt
  • 1 pound ground beef, cooked and drained
  • 2-1/2 cups milk, divided
  • 3 tablespoons all-purpose flour
  • 7 ounces American cheese, cubed
  • 1/4 to 1 teaspoon cayenne pepper (optional)
  • 1/2 pound sliced bacon, cooked and crumbled

Instructions

  1. In a large saucepan, combine the first nine ingredients; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender.
  2. Stir in beef and 2 cups of milk; heat through. Combine flour and remaining milk until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.
  3. Reduce heat; stir in cheese until melted. Add cayenne pepper (if desired). Top with bacon just before serving.
