Guiltless Chocolate Chip Cookies

If you’ve seen my recipes on She’s Intentional or follow me on social media to any degree, it is obvious I love food. Sweets are my specialty: I am a chocolate addict, and I often find myself baking in my free time. However, as one of my health initiatives for the new year, I am minimizing my carbs and sugar intake and striving to follow a keto diet. I realized my old diet relied too strongly on both of these things, and I wanted to change that.

As much as I used to consume these things, I’m really surprised I haven’t caved yet and gone back to my old habits. It’s actually been pretty easy! Don’t get me wrong, I’ve been in tempting situations, but I’ve been able to say no. I’m not making these changes to my diet solely because I am trying to lose weight — the weight loss is a bonus — but I’m making these changes because I want to improve my overall health for the long run. If your New Year resolutions aren’t focused on the bigger picture, they may not last.

It’s still fairly early in my keto journey, but I’ve tried many recipes from Pinterest to mix things up so that I don’t get bored with the same old dishes. I came across this recipe for keto-approved chocolate chip cookies and just had to try them! This recipe is flour- and refined-sugar-free and is an indulgent yet conscious treat!

Guiltless Chocolate Chip Cookies

YIELD: 12

Ingredients

1/2 cup coconut flour
1/3 cup brown sugar
1/2 tsp baking soda
Pinch of salt
3 eggs
1/2 cup butter, melted
1 tsp vanilla
1/2 cup chocolate chips

Instructions

Preheat oven to 350 °F and line a baking sheet with parchment paper.

In a medium bowl, combine the flour, sugar, baking soda, and salt.

Add the eggs, butter, and vanilla, and mix until combined.

Last, stir in the chocolate chips. At this point, the dough will be rather wet. Let it set for a few minutes, and then it will thicken and be ready to roll.

Roll the dough into 12 equal-size balls and place on baking sheet. Bake for 12 minutes or until golden brown.

Enjoy warm with a tall glass of milk!
