Chocolate Greek Yogurt Muffins

Typically I prefer salty snacks over sweet treats, but recently I can’t get enough chocolate. I searched the Internet for a low calorie way to satisfy my sweet tooth. I came across a recipe for Weight Watchers 1 Point Lemon Muffins from Penny Pincher Jenny. They’re not chocolate, but my wheels started turning and I thought why couldn’t I make these chocolate? And so I did!

Ingredients:

Duncan Hines Cake Mix
1 Greek Yogurt (5.3 oz individual size)
1 cup of water

Heat the oven to 350 degrees. Mix all ingredients. Lightly grease a muffin tin and spoon in mixture filling half full. The muffins will double their size while baking. Bake 15-20 minutes.

You’ll notice I didn’t use chocolate yogurt. I actually could not find a chocolate Greek yogurt, so I used cafe latte flavor and luckily it worked. I think this recipe could be tweaked for any taste and any flavor. If you love strawberry use a strawberry cake mix and strawberry Greek yogurt. It’s a very versatile and frugal recipe.

These muffins were just scrumptious served with a cold glass of milk. And guilt free because this recipe made 20 muffins they come in right at 112 calories a muffin. I like to use the My Fitness Pal app to calculate recipe calories and nutrients and save them for future reference.

I’m always happy to find a low calorie recipe and especially for a sweet treat! It was pretty difficult to stop at just one two … well we won’t discuss how many I taste tested to make sure the recipe was blog worthy. Let me just say this, you won’t be disapointed.
